Healthy Broccoli Cheddar Soup (No Heavy Cream)

This broccoli cheddar soup will make you feel like your eating a creamy bowl of goodness without the heavy cream and ton of cheese. This recipe use only a 1/2 c milk of choice and 1 1/2 cups of cheddar cheese!

Another thing different about this recipe than your typical broccoli cheddar soup is that this one had cauliflower as well! I promise you though, this soup is just as tasty and satisfying as eating a bowl of broccoli cheddar soup from Panera.

One thing I really love about this recipe is there are very few ingredients! It’s a really affordable soup to make with just 8 ingredients.

This soup is vegetarian, dairy-free and gluten-free friendly (see notes)!

Makes 4 Large Bowls

Ingredients

  • 2 T butter

  • 2 cloves garlic, minced

  • 1 leek stalk, sliced thin (white part only)

  • 4 c vegetable broth (see notes)

  • 1 head cauliflower, cut into florets

  • 1 head broccoli, cut into florets

  • 1/2 milk (see notes)

  • 1 1/2 c shredded cheddar cheese

Directions

  1. In a large pot on medium heat, melt butter with the garlic. Add in the leeks and cook until they’re soft, about 3-4 mins.

  2. Add a 1/2 c of the broth only and your cauliflower and broccoli florets. Cover and let cook until veggies are tender, about 20 minutes.

  3. Add the other 3 1/2 c broth and 1/2 c oat milk. Bring to a simmer for 5 minutes. Stir in the cheese.

  4. Serve with extra cheese if you’d like.

Notes

Gluten-free: This recipe is gluten-free.

Dairy-free: This recipe can be dairy free by using a dairy-free milk. I personally used oat milk.

Vegetarian: This recipe is vegetarian.

Vegetable Broth: I’ve used vegetable broth for my recipe, but you can certainly use chicken broth if you’d like. I’ve made it before with chicken broth because it’s what I had on hand and it still tasted great.

Milk: I’ve personally chosen to use oat milk for my recipe, but you can certainly use any other milk of your choice. I believe I’ve made this before using both 1% dairy milk and unsweetened almond milk and it turned out great every which way!
