Avocado Deviled Eggs

Since Easter is being celebrated during this Covid-19 crisis, I didn’t plan a huge 3-course meal like I usually would. My easter dinner will be carne asada because that’s what I have. Therefore I decided to make my deviled eggs Mexican style to along with a theme.

makes 12 deviled eggs

Ingredients

  • 6 hard boiled eggs

  • 1/2 c avocado

  • 2 T mayo

  • 1 t hot sauce

  • 1 t lime juice

  • 1 T green onion, finely chopped

  • 1 T cilantro, finely chopped

  • 1/4 t paprika

  • salt and pepper to taste

  • Tajin

Directions

  1. Cut each hard boiled eggs in half and scoop out the yolk and put into a bowl.

  2. Add the remaining ingredients to the bowl. Use a fork to mash everything together until the mixture is smooth.

  3. Either spoon or pipe the mixture back into each eggs.

  4. Serve sprinkled with Tajin seasoning.

Notes

Gluten-free: This recipe is gluten-free.

Dairy-free: This recipe is dairy-free if you use a dairy-free mayo.

Tajin: You can use any chili lime seasoning or use chili powder mixed with salt and lime juice.
