Blueberry Lemon Baked Oatmeal with Coconut

Ingredients

  • 1 1/2 c milk of choice

  • 1 T pure maple syrup

  • 1 egg

  • 1 t vanilla

  • 2 cups old-fashioned oats

  • 1 t baking powder

  • 2 T chia seeds (optional)

  • 1/4 t salt

  • 1 lemon, zest

  • 1 c fresh or frozen blueberries

  • 1/3 c shredded coconut

Directions

  1. Preheat the oven to 350F and grease a small square or rectangular baking dish.

  2. Combine the milk, syrup, egg and vanilla in your baking dish. In a separate bowl combine the oats, baking powder, chia seeds, salt and lemon zest.

  3. Sprinkle half of the oats in the baking dish. Then sprinkle half of the blueberries and coconut o top of that. Repeat again to use up the remaining oats, blueberries and coconut. Feel free to sprinkle more chis seeds on top too.

  4. Bake for 30-35 minutes or until the top is golden brown. Let the oatmeal cool and set for 25 minutes before serving to enjoy a regular oatmeal consistency or wait until completely cool to cut into squares.

Notes

Gluten-free: This recipe is gluten-free.

Dairy-free: You can use your milk of choice for this recipe, making it dairy-free if you like. I used unsweetened almond milk.

Chia Seeds: Optional, but adds more nutrients to the meal.

Coconut: You can omit the coconut from this recipe and it will still turn out just fine without any adjustments.

Meal Prep

To use this recipe for meal prep. Make as directed. You can reheat a bowl of it for about a minute in the microwave when you are ready to eat.
