Blueberry Lemon Oats

Serves 1

Ingredients

Oatmeal

  • 1/2 c oats

  • 1 c water

  • 1/3 blueberries

  • 1/4 t cinnamon

  • dash of nutmeg

  • 1/4 t lemon zest

Toppings

  • plain greek yogurt

  • shaved coconut

  • lemon zest

  • blueberries

  • honey

Directions

  1. In a small sauce pan on medium heat, bring your oats, water, blueberries, cinnamon, nutmeg and lemon zest to a simmer.

  2. Use your spoon to burst your blueberries open against the side of your pot. This will release juices into your oatmeal and give the oatmeal more flavor and color.

  3. Once at desired texture, remove from heat and pour into a bowl. Add your toppings.

Notes

Gluten-free: This recipe is gluten-free if your oats are gluten-free.

Dairy-free: This recipe is dairy-free if you do not use yogurt.

Oats: I used old-fashioned oats, gluten-free.

Blueberries: I used frozen, but fresh work as well.

Additions: Other things I will sometimes add or substitute for toppings is ground flax, chia seeds, vanilla extract, brown sugar, maple syrup, lemon juice, almonds, etc.
