Chocolate Hazelnut Oatmeal Bars

Ingredients:

  • 2 c old-fashioned oats

  • 1/3 c almond flour

  • 1 T cocoa powder

  • 1/2 t baking soda

  • 2 bananas

  • 1 egg

  • 1/3 c almond butter

  • 1 T raw honey

  • 1 T pure maple syrup

  • 1/2 t vanilla extract

  • 1/4 c hazelnuts

  • 2 squares of dark chocolate

  • 1/4 t coconut oil + more for greasing

Directions:

  1. Preheat oven to 375F (350F if using a glass or non-stick pan).

  2. Mix oats, almond flour, cocoa powder, 1 1/2 bananas (mashed), egg, almond butter, raw honey, maple syrup and vanilla extract in a bowl.

  3. Grease a 9x11 baking dish with coconut oil. Pour in the oat mixture. Slice the remaining half of the banana and press slice and hazelnuts into the top of the oats.

  4. Bake for 20 minutes.

  5. Heat the chocolate and 1/4 t coconut oil in the microwave for 1 minute, 30 seconds at a time, stirring in-between.

  6. Serve warm or room temperature.

Notes:

Gluten-free: This recipe is gluten-free.

Dairy-free: This recipe is dairy-free. You can substitute egg for another banana.

Almond Flour: I used almond flour to keep this recipe gluten-free. Feel free to substitute with an all-purpose flour (gluten-free or not).

Almond Butter: You can substitute the almond butter with any nut-butter of your liking.

Raw Honey & Pure Maple Syrup: You can use raw honey, pure maple syrup or both in this recipe. As long as you use a total of 2 T.

Toppings: I chose to top the oatmeal bars with hazelnuts and chocolate but you can use whatever you like or have in the house.

Serving Size: Serves 4 adults or 8 kids for a full breakfast.

Meal Prep:

Make the bars ahead of time and store in fridge until you are ready-to-eat.
