Chorizo Sloppy Joes

This recipe is a result of using what I have at home. The great thing about a recipe like this is that it can be personalized to your preferences/diet. For example you can choose a different type of meat or meat alternative and then add in other things like beans and corn. The same thing goes for topping your sandwich.

I added in cilantro, fresh tomato and pinto beans (which aren’t pictured in some of these photos because I forgot haha). I didn’t add many spices into this recipe because the chorizo I bought already had a lot of flavor and spice, but you can certainly add in spices like chili powder, cumin, paprika, onion powder, etc. if you feel your mixture needs more flavor.

Ingredients

  • 2 T olive oil

  • 1/2 yellow onion, chopped

  • 3 cloves garlic, minced

  • 2 T tomato paste

  • 2 T water

  • 1 lb ground chorizo

  • 1/2 jalapeno, seeded and finely chopped

  • 2 T water

Add-ins

  • cilantro, chopped

  • fresh tomato, chopped

  • pinto beans

  • black beans

  • corn

Other

Toppings

  • avocado

  • sour cream

  • cilantro

  • lime juice

Directions

  1. In a medium saute pan on medium heat, cook the oil, onion and garlic until the onions are translucent. Then mix in the tomato paste and water.

  2. Add your ground chorizo and jalapeno making sure you break down your chorizo into small pieces. Cook for about 8 minutes or until your meat is cooked through. This is where you can mix in any add-ins that you want. I mixed in cilantro, fresh tomato and later on some pinto beans that I found.

  3. Serve on a bun with any additional toppings you prefer.

Notes

Gluten-free: This recipe is gluten-free if you use gluten-free buns or bread. You could also add-in a can of diced tomatoes & beans to make chili.

Dairy-free: This recipe is dairy-free.

Ground Chorizo: You can substitute another ground meat or meat substitute if you’d like.

Add-ins & Toppings: Be creative with what you have in the house! I personally added in cilantro, fresh tomato and beans and topped with cheddar cheese, avocado, plain greek yogurt (sour cream substitute), Tajin seasoning and lime juice!
