Green Bean Salad with a Yogurt Dressing

I love a side dish that looks fancy, but is so easy to whip up and this one certainly fits the bill. This dish is full of spring colors and flavors.

This dish is pretty different to what I normally make, but I feel like this may be a staple side or at least something I can make for dinner guests. Like I said, it looks fancy, but it’s super easy!

Start with blanched fresh green beans and toss in a yogurt dressing filled with fresh dill, lemon juice, vinegar, dijon mustard and more. Then top or toss in walnuts, lemon zest and more fresh dill.

Serves 4-5 (See Notes)

Ingredients

  • 16oz fresh green beans

  • 1 T olive oil

  • 1 T white vinegar

  • 1 T plain greek yogurt

  • 1 T lemon juice

  • 1 clove garlic, minced

  • 2 t dijon mustard

  • 1/4 t pepper

  • 2 t fresh dill, finely chopped + more for topping

  • 3/4 c red onion, thinly sliced

  • 1/4 walnuts

  • 1 t lemon zest for topping

Directions

  1. Boil your green beans for about 6-8 minute or until cooked (you want them to still be crisp, not mushy). Remove from the water and move to an ice bath to blanche them for about 2 minutes.

  2. Meanwhile wisk your olive oil, white vinegar, plain greek yogurt, lemon juice, dijon mustard, pepper and dill together to make the yogurt dressing.

  3. Toss your green beans with the yogurt dressing, red onion and walnuts. Top with fresh dill and lemon zest.

Notes

Gluten-free: This recipe is gluten-free.

Dairy-free: This recipe can be dairy-free by using a dairy-free yogurt.

Serving Size: This recipe works for the amount of green beans shown. The amount of yogurt sauce should be good for up to 1.5 pounds of green beans, but add more red onion and walnuts as necessary.

Vinegar: If you don’t have white vinegar, you can substitute for apple cider vinegar.

Dill: I recommend using fresh dill, but you can chose to use dried if you want. If you don’t like dill, you can substitute for fresh parsley.

Walnuts: You can substitute the walnuts for another nut if you wish. I’d also recommend pecans or pine nuts in this case. It might also work with sunflower seeds!
