Huevos Rancheros

Ingredients

  • 1 15oz can black beans

  • Pinch of Salt & Pepper

  • 4 eggs

  • 2 plum tomatoes, chopped

  • 1 10oz package guacamole or avocado verde

  • green onion, chopped

  • cilantro, chopped

  • cotija or queso fresco cheese

  • Tajin Seasoning

  • 8 warm corn tortillas

Directions

  1. Half-drain your can of black beans so that half of the liquid still remain. Place in a small saucepan on medium heat. Add Salt & Pepper and cook until the liquid starts to bubble.

  2. Meanwhile heat a large frying pan with a drizzle of cooking oil. Fry the eggs to your desired consistency.

  3. Plate your black beans, guacamole and tomatoes and place your fried eggs on top. Then top that with cilantro, green onion, cheese and Tajin. Serve with warm tortillas.

Gluten-free: This recipe is gluten-free.

Dairy-free: This recipe is dairy-free if you eliminate the cheese.
