Huli Huli Chicken

After looking at so many recipes for Huli Huli Chicken, I realized most had a good amount of sugar in them. I like to minimize the amount of sugar so I decided to take a lighter approach when creating my own recipe.

Huli Huli Chicken is a Hawaiian dish that includes ingredients like pineapple juice, soy sauce and worcestershire sauce giving it a unique taste compared to other traditional marinades. This is a great summer recipe to use if you are looking for something a little different.

I recommend grilling the chicken if you can. If not you can certainly cook it on the stove or in the oven. I also recommend marinading the chicken in bite-size pieces (as directed) because it allows for more flavor in each bite (and it takes less time to cook).

Served with grilled pineapple, grilled mushroom and red pepper and basmati rice. I also skewered the mushrooms and peppers. I drizzled them with oil and sprinkled with salt and pepper. They took about the same amount of time as the chicken to cook. The pineapple I grilled by itself for yet again the same amount of time.

Ingredients

  • 3-4 chicken breasts, chopped into bite size pieces

  • 3/4 c pineapple juice (6oz)

  • 1/4 c soy sauce

  • 1 T worcestershire sauce

  • 1 T ketchup

  • 1 T brown sugar

  • 1 T honey

  • 1 T sriracha

  • 2 cloves garlic, minced

  • 1 t fresh ginger, minced

  • 8-10 skewers

Directions

  1. Mix all the ingredients in a bag or container with the chicken. Shake to evenly coat all the chicken. Let marinade for at least 2 hours.

  2. Skewer up your chicken (soak your skewers in water first so they don’t burn).

  3. Grill on medium to medium high heat and cook for about 4 minutes on each side.

Notes

Gluten-free: This recipe is gluten-free.

Dairy-free: This recipe is dairy-free.

Brown Sugar: If you’d like to make a more traditional huli huli chicken, use a 1/2 c brown sugar and reserve some of your sauce to brush on mid-grilling. In other words you’ll cook it more like bbq chicken.

Skewers: Like directed. Soak your skewers in water for at least 10 minutes and wait until just before grilling to skewer your chicken. This help the skewers to burn less while on the grill.

Meal Prep Notes

Make the recipe as directed and reheat to eat! Serve with sides such as basmati rice and veggies like I did! I also skewered the mushrooms and peppers and grilled them.
