Pepperoni Pizza & Garlic Bread Breakfast Toast

DSC_2932.jpg

Wow, I’m laughing a little at myself for this one! I can’t decide if it’s cute or outrageous.

Putting this together totally gave me Lunchables vibes and quite honestly, it does seem like something you’d make for a child to get them to eat breakfast, but this recipe began with the fact that I think pepperoni tastes so good on an egg sandwich.

Start off with your favorite brand of bread and toast them up. Top the pizza toast with scrambled eggs made with mozzarella cheese, Sriracha for the sauce and pan-fried pepperoni. For the garlic bread toast, butter, garlic powder and parsley.

Serves 1

Ingredients

  • 2 slices of bread

  • 2 eggs (one whole, one egg white)

  • 2 T mozzarella cheese

  • 1 T milk

  • salt & pepper

  • 4 mini pepperoni slices

  • sriracha sauce

  • butter

  • garlic powder

  • parsley

Directions

  1. Put your slices of bread in the toaster.

  2. Meanwhile make your scrambled eggs by whisking together your egg, cheese, milk and salt & pepper to taste. Cook your eggs in a small skillet on medium-medium low heat until they are cooked to your preferred consistency. Remove from the pan and top onto one slice of your toast.

  3. In the same pan pan-fry your pepperoni for a 30 seconds-1 minute on each side.

  4. Top one slice of toast with the scrambled eggs, sriracha and pepperoni. Top the other with butter, and garlic powder and parsley to taste. Enjoy!

Notes

Gluten-free: This recipe can be gluten-free if you use gluten-free bread and pepperoni.

Dairy-free: This recipe can be dairy-free if you use dairy-free milk (I used oat milk), dairy-free cheese and dairy-free butter.

Bread: I used my personal favorite bread, Dave’s Killer Organic Good Seed Bread. Use your favorite or play around with fun flavors that would pair well with this recipe.

Eggs: I personally used 1 whole egg and one egg white because that’s what I prefer.

Sriracha: This would probably taste more like pizza if I used ketchup, but I DO NOT like ketchup on my eggs haha. I also love a spicy sauce like sriracha or buffalo sauce with my eggs. Use whatever type of sauce you prefer.
