Spicy Thai Peanut Dressing

Have you ever had that Spicy Thai Chicken Salad from Panera? It is one of my favorite things to order off their menu. I was craving one the other day so I just had to figure out how I could make it myself and eat it all week.

Now my copycat recipe does have some differences to the Panera salad, but I promise you it tastes just as good. For example I used shredded kale instead of romaine lettuce. I also use peanuts instead of almonds. Otherwise I think everything else is pretty much the same. You can certainly make yours with romaine and almonds if you’d like. The dressing recipe is SO simple, just 4 ingredients: Peanut butter, garlic chili paste, sesame oil and rice vinegar! And it tastes just like the spicy thai dressing at Panera of course!

Makes 4 Servings

Ingredients

  • 2 T Creamy Peanut Butter

  • 1 T garlic chili paste

  • 1 T + 1t sesame oil

  • 2 T rice vinegar

Directions

  1. Simply whisk all ingredients together to make the dressing. It’s that simple.

Notes

Gluten-free: This recipe is gluten-free.

Dairy-free: this recipe is dairy-free.

Peanut Butter: I used all-natural creamy peanut butter. If you are using regular peanut butter the consistency may differ. If it seems too thick, add either more sesame oil or olive oil to the mix.

Garlic Chili Paste: If your chili paste isn’t also labeled garlic, I would suggest adding two cloves of minced garlic to the mix as well.
