Zoodle & Turkey Meatball Bake
4-5 Healthy Servings
Ingredients
1 c ricotta
pinch salt & pepper
1 clove garlic, minced
1/4 t fresh basil, chopped
1 egg
1/2 c mozzarella cheese (plus extra to top)
1/4 c parmesan cheese (plus extra to top)
1/4 c flour
3/4 c red sauce (plus extra to top, see below for recipe)
3 large zucchini, zoodled
12 turkey meatballs (see below for recipe)
Directions
Start by preparing the sauce & meatballs if necessary.
Preheat oven to 350F.
In a large bowl mix the ricotta, salt and pepper, garlic, basil, egg, cheeses, flour and sauce until everything is combined. Then toss in your zoodles to coat completely.
Dump your zoodles mixture into a baking dish. Top with a layer of sauce, then sprinkle some extra mozzarella and parmesan on top. Press your meatballs into the top. Then to p with another small layer of sauce and cheeses.
Bake for 25-30 minutes.
Sauce Recipe
Ingredients
2 cloves garlic, minced
olive oil
1 28 oz can of crushed tomatoes
1 8oz can of tomato sauce
2 leaves fresh basil, chopped
salt & pepper to taste
Directions
In a small sauce pan, heat to medium heat with a drizzle of oil and garlic. Cook until fragrant, 1-2 minutes.
Add in the remaining ingredient & stir. Bring to a simmer, cover and let cook for at least 20 minutes.
Turkey Meatball Recipe
Ingredients
1 lb grounds turkey
1/4 c milk
1 egg
1/3 c bread crumbs
1/4 t oregano
1/4 t parsley
1 leaf fresh basil, chopped
salt & pepper to taste
olive oil
Directions
Preheat oven to 450F.
Mix all ingredients together and shape into 12-14 meatballs.
Drizzle pan with olive oil and place meatballs on top. Then drizzle over with another drizzle of olive oil.
Bake for 20 minutes. Put oven on broil and cook for another 10-12 minutes.
Notes
Gluten-free: Recipe is gluten-free as-is if you use panko bread crunbs, I did.
Dairy-free: This recipe is note dairy-free.
Cheese: I ended up using a whole 8oz bag of mozzarella cheese and a 1/3 8oz bag of parmesan cheese.
Zoodles: You can certainly sub pasta for the zoodles. Cook your pasta al dente before mixing it into the cheese mixture and follow the rest of the recipe as-is.
Ground Turkey: You can substitute any other ground meat when making the meatballs and it will turn out the same. You can also try making this entire recipe with sausage instead of meatballs if that’s what you prefer or have around the house.
