Air Fryer Chicken Fajitas with an Avocado Yogurt Sauce

I think the best thing I’ve done recently is purchase a huge thing of seasoned salt. I used it on so many things now, including my fajitas. Seasoned salt and chipotle seasoning together make the perfect mix for these air fryer fajitas.

If you don’t have an air fryer, no worries. You can make these in the oven on a single baking sheet! See the notes for information on how to use your oven for this recipe.

The avocado yogurt sauce I’ve made for these is super simple and brings freshness to the dish with its fresh avocado, cilantro and lime juice. It also uses greek yogurt to keep it on the healthier side, whereas usually something like this is made with sour cream and mayo.

Makes 6-8 Fajitas

Ingredients

Vegetables

  • 1 red bell pepper, sliced

  • 1 orange bell pepper, sliced

  • 1 yellow bell pepper, sliced

  • 1 green bell pepper, sliced

  • 2 yellow onions, sliced

  • 2 T Olive Oil

  • 1 T seasoned salt (see notes)

  • 1 T chipotle seasoning (see notes)

Chicken

  • 3 large chicken breasts

  • 1 T olive oil

  • 1 T lime juice

  • 2 t chipotle seasoning (see notes)

  • 1 t cumin

Avocado Yogurt Sauce

  • 3/4 c plain greek yogurt

  • 3 T lime juice

  • 1/4 c milk

  • 1 1/2 c cilantro

  • 1 ripe avocado

  • 1/2 t salt

Other

  • 6-8 Tortillas

  • Cotija Cheese

Directions

  1. Preheat your air fryer to 400F.

  2. Mix all the vegetable ingredients together so the peppers and onions are coated with seasoning. Air fry for 20-25 minutes or until crispy.

  3. Meanwhile mix all the chicken ingredients together and let sit while your vegetables cook. Once the vegetable are done, you can cook in the air fryer for 20 minutes.

  4. Meanwhile make the avocado yogurt sauce by mixing all ingredients in a food processor.

  5. To serve, slice your chicken and heat your tortillas in the microwave for 20 seconds or cook in a skillet on the stove, on medium high heat, for about a minute each side. Top with the veggies, avocado yogurt sauce and cheese.

Notes

Gluten-free: This recipe is gluten-free if you use corn tortillas to serve.

Dairy-free: This recipe is dairy-free if you choose to use a dairy-free yogurt, milk and cheese.

Seasoned Salt: My seasoned salt includes salt, sugar, paprika, turmeric, onion and garlic. I use the stonemill brand by Aldi, but it is comparable to lawry’s seasoned salt. If you don’t have seasoned salt, feel free to simply include the list of spices above separately.

Chipotle Seasoning: My chipotle seasoning includes paprika, chipotle pepper, salt, garlic, onion and stevia. I use the Rib Rack brand, but you can use another brand or simply add the spices listed above separately.

Cooking in the Oven: If you wish to use the oven, you will cook everything at 400F for 20-25 minutes. You can cook it all on the same sheet.

Yogurt: I used yogurt as a healthier option but you can substitute with sour cream if you’d like.

Milk: I personally used oat milk but you can use whatever kind you’d like.

Tortillas: I’m using flour whole wheat tortillas, but you can use any kind you’d like.

Cotija Cheese: I love cotija cheese so that’s why I chose it for this dish but you can choose another cheese to use or honestly omit the cheese all-together.
