Mango Salsa

I’ve made several variations of this mango salsa before, give or take a few ingredients each time. It’s really nothing groundbreaking, with many similar recipes out there, but I wanted share regardless.

This time my salsa contained mango, red onion, cucumber and cilantro. Other times I’ll add things like corn, tomato, black beans, jalapeno or whatever else I have around to the mix. Just make sure mango is a part of the equation. It is mango salsa after all.

This salsa, however you make it, is great to put on top of fish, poultry and pork. It also works great for fish or shrimp tacos.

Ingredients

As Pictured

  • 1 mango, diced

  • 1/2 red onion, diced

  • 1 cucumber, diced

  • 1/4 c freshly chopped cilantro

  • 1 T lime juice

  • salt & pepper to taste

Other Optional Things to Add

  • avocados, diced

  • black beans

  • corn

  • jalapeno, diced

  • tomato, diced

  • chickpeas

Directions

  1. Simply mix all ingredients together in a bowl and enjoy.

Do I Peel The Cucumber? Up to you on whether or not you’d like to peel your cucumber. I personally don’t mind the skin and keep it because of the extra nutrients.

Additional Add-ins: I make this recipe is so many different variations depending on what I have. Be creative with what you have and like.
