Cauliflower Parsnip Mash

Ingredients
1 head cauliflower
2 parsnips
1 T butter
2 cloves garlic
1/2 c milk
1 t Salt
1 t Pepper
Directions:
Cut your cauliflower into medium-sized crowns. Peel and cube your parsnips into about 2 inch pieces.
Bring a large pot of water to a boil. Add parsnips and boil for 8 minutes. Then add cauliflower and boils for an additional 10 minutes or until tender.
Drain your cauliflower and parsnips and place into a food processor with the remaining ingredients. Process until smooth.

Dairy-free: Use a dairy-free milk (and butter if needed) to make this dairy-free.
Parsnips: Parsnips are high in fiber and water content, making them a healthy addition to a cauliflower mash.
