Cauliflower Parsnip Mash

Ingredients

  • 1 head cauliflower

  • 2 parsnips

  • 1 T butter

  • 2 cloves garlic

  • 1/2 c milk

  • 1 t Salt

  • 1 t Pepper

Directions:

  1. Cut your cauliflower into medium-sized crowns. Peel and cube your parsnips into about 2 inch pieces.

  2. Bring a large pot of water to a boil. Add parsnips and boil for 8 minutes. Then add cauliflower and boils for an additional 10 minutes or until tender.

  3. Drain your cauliflower and parsnips and place into a food processor with the remaining ingredients. Process until smooth.

Notes

Gluten-free: This recipe is gluten-free.

Dairy-free: Use a dairy-free milk (and butter if needed) to make this dairy-free.

Parsnips: Parsnips are high in fiber and water content, making them a healthy addition to a cauliflower mash.
