Turkey Meatloaf with Spicy Sauce

Ingredients

Meatloaf:

  • 1 c onion, chopped

  • 1 clove garlic, minced

  • 42oz ground turkey

  • 1 egg

  • 1/3 c milk

  • 8oz baby bella mushrooms

  • 1/2 c bread crumbs

  • 1/4c parmesan cheese

  • 1 t fresh thyme

  • 1/4 t salt

  • 1/4 t pepper

Sauce:

  • 1 28oz can crushed tomatoes

  • 2 T tomato paste

  • 1/4 c red wine

  • 1 T Worcestershire Sauce

  • 1 t chili flakes

  • 1/2 c water

  • 1/4 t salt

  • 1/4 t pepper

Garnish:

  • Mozzarella, Provolone & Parmesan Cheese

  • Fresh Thyme

Directions

  1. Preheat oven to 425F.

  2. In a large skillet on medium heat cook the oil, onion and garlic until golden and translucent. Sit aside in skillet and let cool.

  3. In a large mixing bowl mix together the ground turkey, egg, milk, 1/2 c mushrooms (finely chopped) bread crumbs, parmesan cheese, thyme, salt, pepper and half of your onion and garlic.

  4. Form the meat mixture into a loaf and place in a greased pan. Drizzle with olive oil and use your hands to rub it over the whole loaf.

  5. Cook your Meatloaf for 10 minutes. Meanwhile in a large skillet make the sauce by combining the crushed tomatoes, tomato paste, red wine, Worcestershire sauce, chili flakes, water, salt, pepper and the other half of your onion and garlic mixture. Bring to a boil and let the sauce simmer for 5 minutes.

  6. Remove the loaf from the oven and cover the loaf with the sauce letting the extras fall into the pan. Add extra mushrooms (sliced) to the pan. Bake for an additional 35 minutes.

  7. To serve, slice your loaf , melt your cheese on top, and sprinkle with fresh thyme.

Notes

Gluten-free: This meal is gluten-free friendly as long as you us gluten-free panko bread crumbs.

Dairy-free: You can certainly use a milk alternative to make this recipe dairy-free.

Ground Turkey: You can certainly use ground beef or pork to make a more traditional meatloaf. I call for ground turkey because it is a healthier option.

Mushrooms: If you wish, you can omit the mushrooms. However if you are using lean ground turkey, the mushrooms help keep the meatloaf moist, so I would keep them.

Meal Prep

Make this recipe ahead of time and eat sides such as Cauliflower Parsnip Mash and Sautéed Green Beans. If you'd like more variety, make meatballs out of some of the meatloaf mixture and serve with pasta and some of the spicy sauce.
