Chili Lime Tilapia with Grilled Pineapple Salsa

When it’s summertime I’m looking for any excuse I can to fire up a grill for a recipe. That’s where I came up for the idea for the grilled pineapple salsa. Take pretty much all the component and throw em on the grill sounded like the best idea to me.

Now being that we are grilling the tomato and pineapple for this recipe, this means it’s going to be a bit sweet. Which is why I wanted to turn the heat up for the fish marinade. 

And of course what better to pair the fish and salsa with than some rice & beans. Full of fresh cilantro, lime zest and juice. My Cilantro Lime Rice & Beans recipe.

Such a great summer meal.

Plus... fish. I polled my followers not to long ago about their favorite summer foods and was surprised a lot of them said fish! So with that being said I’ll be venturing into the fish department more often.

Now for those of you who don’t like fish or tilapia more specifically, you can try this same marinade on other protein options such as shrimp or chicken.

Great thing about this recipe too is that it would also work well for a taco meal! Maybe add a little bit of cabbage and a chipotle or avocado crema and you can make an awesome taco... hm should have picked up some tortillas. Next time!

Serves 4

Ingredients

Marinaded Tilapia

  • 2 T olive oil

  • 2 T lime juice

  • 1/2 t lime zest

  • 1 t hot honey

  • 1 t chili powder

  • 1 t paprika

  • 1/2 t salt

  • 4 Tilapia filets

Grilled Pineapple Salsa

  • 5 1/2 inch slices fresh pineapple (about 1/2 a pineapple)

  • 1 green bell pepper

  • 8 campari tomatoes

  • 1 jalapeno pepper

  • 1/4 c red onion, chopped small

  • 2 T fresh cilantro, finely chopped

  • 1 T lime juice

  • salt & pepper to taste

Directions

  1. Mix all the marinade ingredients together and marinade your filets for at least 2 hours (I did mine for 24 hours).

  2. Heat your grill to medium high heat. Start by grilling your pineapple slices, green bell pepper, campari tomatoes and jalapeno pepper for about 4-5 minutes each side until there’s a nice char to them (grill the tomatoes on aluminum foil).

  3. Then turn the heat down to medium and grill your tilapia for about 3-4 minutes each side (grill the fish on aluminum foil).

  4. Meanwhile chop your pineapple, tomatoes and green pepper into small 1/2 inch pieces (the tomatoes will be soft a crush, just give them a rough chop). Mix together and run through a colander to get any extra tomato juices out. Then finely chop the jalapeno and add it to the mix along with the remaining salsa ingredients.

  5. Serve the fish topped with the salsa and with this Cilantro Lime Rice & Beans.

Notes

Gluten-free: This recipe is gluten-free as is.

Dairy-free: This recipe is dairy-free as is.

Hot Honey: You can substitute regular honey or omit it.

Tilapia: Try this recipe with shrimp or chicken as an alternative. Even salmon would be yummy!

Compari Tomatoes: You can really use any type of tomatoes that you like.

Grilling: When grilling the tomatoes and fish, make sure to use aluminum foil or a surface made to grill these types of foods on. Something like this. Otherwise you’ll find yourself in a messy situation with no dinner :(
