Cilantro Lime Rice & Beans

Cilantro rice and beans is one of those classic side dishes everyone should know how to make, simply because it’s so simple to make! Just a few additional steps to making regular rice.

I’ve used basmati rice in this recipe because I made this batch to serve with fish and I love basmati and fish together. Also basmati is simply my fave. However you can really use whatever type of rice you like, White rice, brown rice, they’ll all work just fine.

I also opted for black beans because I prefer them over pinto, but you can if course sub with pinto beans if that’s your jam. Now besides that, all else you need is olive oil, a lime (for zest & juice), fresh cilantro and some salt. How fresh and colorful!

Serves 4

Ingredients

  • 1 T olive oil

  • 1 c basmati rice

  • 1 1/2 t lime zest

  • 2 c water

  • 3 T lime juice

  • 1/2 t salt

  • 1/4 c cilantro, finely chopped

  • 1 15.5 oz can black beans, drained

Directions

  1. In a saute pan on medium heat, toast the rice in the olive oil for about 3 minutes.

  2. Add the lime zest and give it a quick stir. Then add the water, stir again, cover and let the rice cook for about 15-20 minutes.

  3. Add the lime juice, salt, cilantro and black beans and mix well. Enjoy!

Notes

Gluten-free: This recipe is gluten-free as is.

Dairy-free: This recipe is dairy-free as is.

Olive Oil: Use which ever oil you like. Coconut oil would work well too. I imagine the hint of coconut would taste great.

Basmati Rice: Feel free to use other rices like white rice, brown rice or jasmine.

Black Beans: Feel free to substitute with pinto beans if you prefer.
