Cold Beef Noodle Bowl/Salad
I FORGOT THE EDAMAME! I’m so sad because after I made and took pictures of this dish I realized I forgot the edamame. It was supposed to make it so much more colorful too! So PLEASE, for me make this with edamame lol. And next time I make this, I’ll make sure to take updated photos.
Ingredients
Beef Marinade
3 T olive oil
2 t sesame oil
3 T soy sauce
1 inch ginger, minced
3 cloves garlic, minced
Dressing
1/4 c soy sauce
2 T sweet chili sauce
2 t sesame oil
2 T peanut butter
2 T rice vinegar
1 t hot chili oil
2 cloves garlic, minced
1 lime, juiced
Chili Lime Cashews
3/4 c cashews
drizzle of olive oil
drizzle of hot honey
1 T tajin seasoning (see notes)
Other
9.5 oz soba noodles
1 yellow bell pepper, cut into thin strips
1 orange bell pepper, cut into thin strips
8 oz shelled edamame, cooked
2 chili peppers, thinly sliced
6-8 oz beans sprouts
sesame seeds for garnish
green onion for garnish
Directions
Mix all ingredients of the marinade and marinade the beef for 2-24 hours (the longer the better). I also suggest making the dressing and chili lime cashews ahead of time. For the dressing, whisk all of the ingredients together until smooth. For toss your cashews with the oil, hot honey and seasoning. Broil on low. Check after 3 minutes and cook until toasty.
On the day of bring a pot of salted water to a boil and cook your soba noodles according to package directions. When done, drain and immediately rinse the noodles with cold water so they don’t stick.
Meanwhile in a pan on medium heat, cook your beef for about 8 minutes or until cooked to your liking. Clean out that pan and cook your pepper in a bit of oil for just 3-4 minutes. You still want then to be tender/crunchy. You can also prepare your edamame according to directions at this time.
For your noodle bowl store ingredients separately and assemble when ready to serve. For a salad toss the noodles with the peppers, edamame, beans sprouts, cashews and dressing. Serve topped with sesame seeds and green onion.
Notes
Gluten Free: Use rice noodle and tamari as substitutes.
Dairy Free: This recipe is dairy free.
Chili Lime Cashews: As a substitute for tajin, you can use chili powder and lime juice. Or you can purchase chili lime flavored cashews at the store.
Hot Honey: You can use regular honey as a substitute.
Soba Noodles: I used soba noodles because they are high in protein but you can certainly make this dish with another asian noodle such as rice or egg noodles.
Chili Peppers: If you do not like spice, make sure to seed your chili peppers. Leaving the seeds in will create a mild spice level.
