S’mores Baked Oatmeal (High-Protein)

Makes One Serving

Ingredients

  • 1/2 old fashioned oats

  • 1/4 t cinnamon

  • 1/4 t baking powder

  • 10g worth of vanilla protein powder (optional)

  • 1 T ground flax (optional)

  • 1T honey

  • 1 T nut butter (I used almond)

  • 1/2 c milk

  • graham cracker square

  • chocolate chunks

  • mini marshmallows

Directions

  1. Preheat oven to 350F.

  2. Mix oats, cinnamon, baking powder, protein powder, ground flax, honey, nut butter and milk in a bowl. Spoon into a greased oven safe dish.

  3. Top with broken pieces of your graham cracker square.

  4. Cook for 15 minutes. Top with mini marshmallows and then cook for 10 more minutes.

Notes

Protein Breakdown: 24 grams of protein: oats 5g, protein powder 10g, ground flax 2g, nut butter 3g, milk 4g protein

Protein Powder & Flax: You can make the recipe without these two ingredients and it will turn out just fine. If not using protein powder add a 1/4 t of vanilla extract.

Texture: I you prefer a cake texture, blend ingredients in step 2 in a blender or food processor.

Graham Crackers: I used Trader Joe’s Cinnamon Graham Crackers! They were SO good, I definitely recommend.
