Greek Eggplant
I made this greek eggplant based on the grilled eggplant I love at greek cafe near work. I had been craving it so I took it upon myself to make it. I’ve been eating it alongside the Air Fried Falafel I made for lunch.
About 3 Healthy Servings
Ingredients
3 T olive oil
1/4 tsp dried oregano
1 T parsley, chopped
1 t cumin
1/4 t salt
1/4 t pepper
1 large eggplant, 3/4 inch slices
Feta Cheese
Directions
Preheat the oven to 400F.
Mix the first 6 ingredients together and toss with your sliced eggplant.
Bake on a sheet pan for about 20-25 minutes, flipping halfway through.
Enjoy topped with feta cheese.
