Greek Eggplant

I made this greek eggplant based on the grilled eggplant I love at greek cafe near work. I had been craving it so I took it upon myself to make it. I’ve been eating it alongside the Air Fried Falafel I made for lunch.

About 3 Healthy Servings

Ingredients

  • 3 T olive oil

  • 1/4 tsp dried oregano

  • 1 T parsley, chopped

  • 1 t cumin

  • 1/4 t salt

  • 1/4 t pepper

  • 1 large eggplant, 3/4 inch slices

  • Feta Cheese

Directions

  1. Preheat the oven to 400F.

  2. Mix the first 6 ingredients together and toss with your sliced eggplant.

  3. Bake on a sheet pan for about 20-25 minutes, flipping halfway through.

  4. Enjoy topped with feta cheese.
