Grilled BBQ Meatloaf
So I was trying to come up with a summer meatloaf recipe and naturally found a BBQ would be great. Then as someone who loves to grill literally anything and everything, I thought to myself….. can you grill a meatloaf? With a bit of a google search, apparently I’m not the only person to have thought of the idea.
As far as the meatloaf itself, I added dry bbq seasoning, jalapeno, smoked paprika and worcestershire to the meatloaf to give it the bbq flavor and then added the typical onion, egg, bread crumbs and milk.
Instead of the usual topping of ketchup, I used bbq sauce. I had some leftover onion so I decided to make some caramelized onions for the top as well.
Okay, so how do we grill a meatloaf? I looked up several other recipes which people said how to grill the meatloaf and well… none of those exact directions worked for me. I’m guessing it really depends on the type of grill you have. The best way to go about it is to use a meat thermometer, but mine was apparently broken… Luckily I’m pretty familiar with how meat should feel to the touch when its ready so I was fine, but for the sake of writing a recipe, please use a meat thermometer.

Ingredients
Meatloaf
2 lbs ground meat
1/2c onion
1 T + 1t jalapeno
1 T bbq seasoning
1t smoked paprika
1 T worcestershire
1 egg
1/4 breadcrumbs
1 T milk
Caramelized Onions (optional)
onion (remaining from the meatloaf)
1/2 t sugar
1 T water
Other
1/2 c bbq sauce
1/2 t smoked paprika
Directions
Mix all your meatloaf ingredients together in a bowl and form a loaf. Place on a double layer of aluminum foil.
On medium-high heat, cook your onions until they being to turn translucent. Then added the sugar and water and continue to caramelize until they are brown.
Meanwhile mix your bbq sauce and paprika. Pour evenly over your meatloaf. When your onions are done, put those over the sauce.
Close the foil over the meatloaf so that you create walls of foil, leaving a slit at the top (to let steam escape).
Cook your meatloaf on medium to medium high heat for about ~40-45 minutes or until your meat reaches 160F in the middle.
Notes
Gluten-free: I used panko breadcrumbs which made this meatloaf gluten-frree.
Dairy-free: I used oatmilk and made this dairy-free.
Ground Meat: I used 80-20 Ground Beef. Typically for meatloaf you want a little fat in your meat. You can also use another ground meat like ground chicken or a mix of beef, pork and veal.
BBQ Seasoning: I used this New Primal BBQ seasoning for mine. You can use your favorite brand.
Smoked Paprika: You can sub the smoked paprika with regular paprika. If you do, I would suggest adding a bit of liquid smoke if you have it.
BBQ Sauce: I used this New Primal BBQ sauce for mine. You can use your favoritebrand. If you are already using a smoky bbq sauce, omit the smoked paprika.
