Mexican Chimichurri

A variation on chimichurri that’s great as a marinade or topping to any Mexican inspired dish. I love to put this on my tacos, but it’s also taste great on things such as nachos, burrito bowls or inside a quesadilla. Check out my Carne Asada recipe that I especially love to pair this with on tacos.

Ingredients

  • 1 c fresh cilantro, finely chopped

  • 1/4 c fresh parsley, finely chopped

  • 1 jalapeno, seeded and finely chopped

  • 2 T olive oil

  • 1 lime, juice

  • 3 cloves garlic, minced

  • salt to taste

Directions

  1. Mix all ingredients together. If you don’t want to chop everything by hand, you can put everything in a food processor.
