Soy Sriracha Lettuce Wraps

4 servings (4-5 lettuce wraps each)

Ingredients

  • 1 T olive oil

  • salt & pepper to taste

  • 1 8oz can of diced water chestnuts

  • 2 carrots, peeled & diced small

  • 1/2 red pepper, diced small

  • 5 oz mushrooms, diced small

  • 1 lb. ground turkey

  • 3 T soy sauce

  • 1 T rice vinegar

  • 2 cloves garlic, minced

  • 1/2 t fresh ginger, minced (or ground)

  • 1 t sriracha + more for topping

  • 1/2 t pepper

  • 1 t brown sugar

  • A head of bib lettuce

Directions

  1. In large skillet on medium heat, cook your veggies in the olive oil, seasoned with salt & pepper to taste. Cook for about 7 minutes or until cooked tender. Remove from the skillet.

  2. Add the ground turkey to the same pan and cook through for about 8 minutes. Meanwhile mix the remaining ingredients with a whisk. Then add the mixture to the meat, bring to a simmer and cook for 3 minutes. Add the veggies back in and combine.

  3. Serve on bib lettuce leaves with topped with additional sriracha.

Notes

Gluten-free: This recipe is gluten-free if you use gluten-free soy sauce.

Diary-free: This recipe is dairy free.

Ground Turkey: You can also use ground beef, chicken, pork or go meatless with beans or tofu.

Sriracha: This recipe as-is is very mild. Add more sriracha if you like spice.
